Twenty Ten

We had a great meal with great friends at Potpie last night and were home and in bed well before midnight. Ellen slept until 7:45 this morning, which is just about the best way to start the new year that I can think of.

Ellen continues to be ambivalent about hats in this New Year ...
And the cook had boundless energy this morning after sleeping in, so we all ate pumpkin pancakes!
The recipe is from the November issue of Tastebud. It is by the pastry chef / owner of Dolce Baking Company in Prairie Village (where you may recall that I got some delish cupcakes!)

They are yummy ...

Erin's Pumpkin Pancakes
1 1/2 c. all-purpose flour
1/2 c. whole wheat flour (or just use 2 c. all-purpose)
3 T. brown sugar
2 t. baking powder
1 t. baking soda
1 t. ground allspice
1 t. ground cinnamon
1/2 t. ground ginger
1/2 t. salt
1 1/2 c. milk (2% or whole)
1 c. pumpkin puree
1 egg
2 T. vegetable oil
2 T. vinegar (she uses apple cider vinegar)

In a separate bowl, mix together the milk, pumpkin, egg, oil and vinegar. Combine all the dry ingredients in another bowl. Stir in the pumpkin mixture just enough to combine.
Heat a lightly oiled griddle or frying pan over medium-high heat. Pour or scoop the batter on to the griddle, using approximately 1/4 cup for each pancake. Brown and flip. Serve hot! (It makes about 16 pancakes if you use a 1/4 measuring cup).

Minnie & I were wondering if our pancakes were going to be delivered to us in bed or if we would have to come pick them up. Please say delivered ;)
