Uno de Mayo

We had our annual Cinco de Mayo party again this weekend. I think (hope!) a good time was had by all ... we certainly enjoyed ourselves.

Last year was the first year we included kids - since we had our own, and all. We continued the family-friendly theme this year and, while it is so much fun to see all the kids together, it really isn't relaxing for anyone. And, everyone is gone by about 7:00pm. (Which might be for the best since everyone is exhausted from chasing their kids!) Maybe next year we'll have a parents-night-out theme.

I had grand intentions of posting pictures of all the food but, alas, no time. (See: above). So - the beverages will have to do.

I did have time to take a picture of our leftover lunch today. A torta sandwich with refried beans, chicken taco meat, avocado, radishes, cilantro, queso fresco and onions. Ummm, YUM.


For those of you who want to plan your own celebration on the actual Cinco de Mayo, here is what we ate:
Avocado Salsa
Jicama sticks with chili lime dip
Layered Mexican Dip
Carne Guisada (cooked in a crockpot for about 8 hours)
Slow Cooker Chile Chicken Tacos (used 10 pounds of meat; 6 pounds thighs and 4 pounds breasts)
Corn and flour tortillas
"Traditional" toppings - cilantro, sliced radishes, chopped white onion, queso fresco
"Familiar" toppings - guacamole, shredded cheese, tomatillo salsa, avocado salsa, sour cream
Salad of chopped romaine, sliced fruit and avocados with poppyseed dressing
Peruvian Sarsa Salad (subbed edamame for lima beans, and used less onion and garlic)
Choco Tacos
The Paloma (a lazy man/woman's margarita)

Ellen thoroughly enjoyed the party and all her little friends. Maybe next year she can be in charge of the whole thing?
