Well, THIS is your brain rubbed with taco seasoning and slow cooked for 4 hours in a Dutch oven with sauteed onion, green chilies, and garlic. Yep...Mexican Pot Roast filling!
The made from scratch flour tortillas from Mexican Price Chopper (Roeland Park) serve as the perfect little envelope for these enchiladas straight outta Juarez.
All tucked in a row atop a thin layer of taco sauce.
Smother with remaining taco sauce and cheese blend...equal parts Cheddar & Monterey Jack.
Dinner is served! Yep, I got so carried away that I threw on my Mexican national team soccer jersey for the occasion. I know what you're thinking...wow, is that the same one he got during his senior trip to Cancun in March of 1996? and holy Jesus, is it still big on him? Umm...yes and yes...
Mexicans do wonders with a pork butt and it looks like Erik is learning ... Now was that sauce homemade or store bought? Save the meat to put on tostadas with avocado and a squeeze of lime.
Lund, let's be honest here... a) please get me a sample of those immediately. Looks awesome. b) that and any soccer jersey for that matter, makes you as gay as Lambert.
